Trattoria Pennestri was founded in Rome in 2017 by Valeria Payero and Tommaso Pennestri after years of contemplation and thought. With over 20 years experience in the restaurant industry, with Tommaso working in kitchens and Valeria’s working as a waitress and in wineries, the two united their expertise to create a new trattoria concept centered around the guests and their experience. Tommaso can trace his earliest memories of working in the kitchen back to his childhood and studies his craft with dedication and consistency in order to strike balance between tradition and innovation. This balance is fundamental to the restaurant: a place with some of the most renowned dishes of Roman culinary tradition and innovative combinations that have been carefully created through continuous research. Carefully curated by Valeria, the Trattoria’s wine cellar is the result of continuous research among wine varietals that were long forgotten and are now being rediscovered and small oenological organization throughout Italy, with a particular focus on Lazio and its best vineyards.
