The Exchequer, Award Winning Head Chef José was born and raised in Santander. José carries with him a beautiful breadth of knowledge and understanding of the regional cuisines of his native Spain. Committed to sourcing vibrant local ingredients from around Ireland and weaving Spanish influences into an exciting menu that we hope you will enjoy. All José’s sauces and dishes are home-cooked from scratch and many using local recipes passed down through generations.
